The Brick Raised Bed Layout That Saved Our Garden (After Year One Chaos)

Our first raised beds were placed by instinct, which is another way of saying we had no idea what we were doing. We’d spent weeks looking at brick raised bed gardening layout plans online, printing things out, arguing over graph paper — and then Ben said “let’s just start” and we placed four beds along the back fence line because it looked tidy. That decision cost us most of a growing season.

Three years in now, and the layout is finally working in a way I can actually explain. Not because we did it right, but because we did enough wrong to understand what matters. This is the part I wish someone had told us before we set a single brick.

Why We Buried Half Our Beds in Shade

The back fence runs along the tree line. In March, when we were planning, those trees looked like they were casting maybe a foot of shade. By June, with full canopy and a high summer sun angle, two of our four beds were getting less than four hours of light a day. Tomatoes. We planted tomatoes there.

We didn’t observe the site at different times of day. That was the whole mistake. I’d read to watch sun patterns for a week before placing anything, and I skipped it because we were impatient and it was April and things felt urgent. The beds against the fence got full shade by 2pm. Everything in them sulked. The peppers just sat there, not dying, not growing, just existing. We pulled two of those beds apart after the first season and rebuilt them thirty feet closer to the house, which Ben did not love because it meant moving about four hundred bricks.

In Zone 7a, our last frost is usually around April 15th, which gives us a planting window that starts just when the sun angle shifts. What looks like a sunny spot in February might not be in May. The only way to know is to watch it across the day in late April when you’re actually going to be planting.

5 Layout Decisions Before You Place a Single Brick

  1. Map sun across the whole day, not just morning. Go out at 9am, noon, and 3pm and mark where shadows fall. Do this in late April, not February. Trees leaf out and everything changes. Vegetable beds need at least six hours of direct sun — eight is better for tomatoes, squash, and peppers.
  2. Place water access before you place beds. Figure out where your hose reaches and where you’d need to add a line before you commit to a location. Moving a bed after it’s built is a two-person weekend job. Running a new hose bib is a plumber’s bill. Think about this first.
  3. Plan path widths at 30 inches minimum. Everything I read said 18 inches. That’s not enough if you’re pushing a wheelbarrow, which you will be. We widened our main path to 30 inches in year two and stopped hating our life in fall when we’re hauling compost.
  4. Decide on soil depth by crop, not by how much brick you have. Root vegetables need 12 inches minimum. Herbs and salad greens do fine in 6-8 inches. If you’re mixing crops across beds, build different depths — don’t standardize to the shortest one.
  5. Block out rotation zones on paper before building. Nightshades, brassicas, legumes, and alliums should rotate each season. If your beds are all the same size and shape, rotation is easier. Weird custom shapes are annoying to rotate meaningfully. We use a University of Georgia Extension rotation guide as a rough reference.
Before you build:

  • Watch sun patterns at three times of day in late April
  • Confirm hose reach before placing beds
  • Mark where your wheelbarrow needs to pass
  • Write down your rotation plan — even a rough one — so bed sizing makes sense later

Does North-South Actually Matter

Standard advice says run beds north-south so taller plants don’t shade shorter ones. Our best-producing bed runs east-west along the south-facing side of the house and it consistently outperforms the north-south beds by enough that I’ve stopped pretending orientation is the main variable.

My theory — and it’s only a theory — is that the thermal mass of the brick on the south side of the bed, facing the house, is retaining heat in a way that extends our effective season by a couple of weeks in both directions. We’re in Zone 7a, so a late frost in April or an early one in October can wipe out plants. That extra warmth from the brick might be doing more than the orientation.

I don’t have a controlled comparison. I can’t tell you definitively why that bed does what it does. What I can say is that the received wisdom about north-south orientation might matter less than where you’re getting reflected heat and what’s sheltering the bed from wind. The Spacing Nobody Gets Right

Bed-to-bed distance is the thing that seems obvious and isn’t. Too close — under 24 inches — and you can’t reach the center of a 4-foot bed from a standing position in the path. You end up stepping in to reach something and compacting the soil. Too far — over 48 inches — and you’re wasting ground that could be producing, at least if you’re working with limited space like we are on five acres where the cleared pasture has to do a lot of things at once.

We settled on 30-inch paths for main access and 24-inch paths between secondary beds. That’s what fit our space and our wheelbarrow. I can’t tell you the right number for yours because it depends on whether you’re using power tools in the garden, whether you have a cart versus a wheelbarrow, and whether anyone gardening with you has different reach or mobility needs than you do. Measure with your actual body and your actual tools before you commit brick to ground.

What Ben Still Refuses to Do

Ben wanted to skip the permanent brick edges entirely and just use landscape timbers. Cheaper, faster, done in a weekend. “You’re overcomplicating it,” he said, which is something he says approximately three times a week and is sometimes correct.

His argument was that timbers would give us flexibility to change the layout as we figured out what worked. And he wasn’t wrong about that. Our layout has changed twice since we built the brick beds, and each time we moved or added a bed, it was a significant project — pulling stacked brick, releveling ground, resetting everything. With timbers we’d have just shifted things around on a Saturday.

What he didn’t account for was Pepper. She’s gotten into the garden four times in three years, and twice she hit the beds hard enough that the brick edging saved the structure in a way I don’t think timbers would have. Also, honestly, the brick looks better and it lasts, and I’m the one who has to look at it every day. We compromised by using timbers for the herb spiral surround and brick for the main kitchen beds. He built the timber section in about two hours without measuring anything and it’s still level, which is infuriating.

The Mulch Path System We Kept Changing

We have tried: wood chip mulch, pea gravel, cardboard-under-wood-chips, cardboard-under-straw, bare compacted dirt, and landscape fabric with gravel on top. None of them are working correctly right now. This is not a solved problem.

Wood chips look great in September and by June they’ve migrated into the beds, decomposed into a weed-growing medium in the paths, and redistributed themselves to places we didn’t put them. Pea gravel stays put but goes into your shoes constantly and makes kneeling painful. The cardboard layer under anything breaks down in one Tennessee summer — the humidity here is not kind to cardboard. Landscape fabric gets punctured, wrinkles, and eventually starts looking worse than bare dirt.

The path situation is genuinely unresolved. We’re currently back to wood chips because they’re free from a local tree service and at least they’re soft underfoot. Hank has decided the main path between the kitchen beds is his preferred napping location, which makes the chips look even messier. If you have a system that actually stays put in a humid climate with heavy rain events, I’d like to hear it, because we haven’t found one. The University of Tennessee Extension has some guidance on garden paths in humid climates that we’ve consulted but haven’t fully implemented yet.

Layout Works, Until It Doesn’t

A good layout solves maybe sixty percent of garden problems. That sounds pessimistic, but it’s actually useful to know ahead of time so you’re not confused when things still go wrong with a well-planned space.

  • Layout won’t fix soil quality. Two of our best-positioned beds produced poorly for a full season because the soil mix was too heavy — too much clay-based topsoil, not enough compost. Position doesn’t matter if the soil doesn’t drain.
  • Layout won’t stop squash vine borers. Nothing stops squash vine borers. This is just a fact about gardening in Tennessee.
  • Even with perfect path width, you’ll still trip over the hose. Accept it.
  • Rotation zones planned on paper will get disrupted when one crop fails and you replant with whatever you have. After three seasons, our “rotation plan” is more of a loose suggestion.
  • The bed in the best sun position will also be the one Pepper targets if she gets out. That’s just how it goes.

The brick itself is worth it — for longevity, for thermal mass, for the fact that it doesn’t rot. Standard clay bricks run about $0.50 to $1.00 each at most building supply stores, and a standard 4×8 bed perimeter will take around 60-80 bricks depending on how you stack them. Budget around $50-80 per bed in materials, more if you’re going two courses high. It took Ben and me one full weekend to build three beds, including leveling ground and mixing soil. That’s a realistic timeline if you haven’t done it before.

The layout planning matters. Do it before you place anything. But give yourself permission for the plan to keep changing, because it will — and that’s not failure, it’s just what a real working garden looks like after the first year.
